For the sausage in this recipe - I used elkdeer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! This has zing, but it is not super spicy. Use your ground venison, no one will ever know it's not regular ground beef. Try using marmalade or orange juice in place of the lemon juice for an easy change. I've also substituted different vegetables, snow peas or even baby corn. This is what I had on hand, but this recipe would also work great with beef. Anyway I did not realise how much meat would come from just two legs, and I ended up making crab topped oysters instead of kilpatrick and still had enough to make creamy crab pasta for the kids and still had loads left for the ostrich.
