This is a great warm salad for fish or chicken. Leftovers are great reheated too. If you dont like chillies-no problem just leave them out (although to add some extra flavour in place of the chillies ,you might like to add some extra lemon juice, salt and pepper). Serves 4. At first I thought, chickpeas with chickpeas But believe me, it's great. I gathered all my confidence and asked for the recipe for the salad. Have made it many times at home since then and serve it not only with hummus but as a side dish or just as a salad for lunch. I never add the winter squash because I don't have any on hand and don't go through the trouble to make it... although they do suggest using a jar of baby food. I also substitute a tablespoon or two of curry powder with the 1 tsp turmeric. I also add some feta cheese if I have some in my fridge. It adds a nice flavor to the stew. Everybody always asks about it at work and wants the recipe. I have eaten many yumm bowls over the years and Ive tried to dissect the flavors of the sauce and come up with a recipe thats close, and here it is. This sauce is egg free, dairy free, gluten free and sugar free. If you have nut allergies I suggest you stay away, sorry. It is high in vitamins, antioxidents, and has a combination of healthy carbs and protines...it is soooo filling!! I cook the beets in one of the new microwave steam bags (they are my new best friend). I let them cool in the bag, and then rub the peels right off.
