I decided to expirement in the kitchen and this is what I came up with. My husband calls it Chili Pot Pie. If you like it spicy you can add red pepper flakes or other spices with some heat. Don't let the list of ingredients or steps intimidate you, it is really easy and many of the ingredients you probably already have on hand. They featured it on an episode of the Cooking show, "Savor the Southwest" which aired several years ago. It's easy to make, delicious and authentic Mexican. A cooking note: it's best made with either red or pink beans.
