99 Bananas and a Coconut Cocktail - June 16, 2008

This reminds me of a Banana-Coconut Cream Pie...it's good, very good. -- posted by sassafrasnanc

Nutmeg Syrup - June 16, 2008

Warm nutmeg syrup tastes great drizzled over frozen vanilla yogurt, pancakes or waffles. The longer you heat the sugar-water mixture, the more the liquid evaporates - and the thicker, more concentrated the syrup. There is a point of no return, however, when you end up with hard, brittle, pseudo-candy, so don't walk away from the stove when preparing this. If you want a really dark-colored syrup, use dark brown sugar; for a golden, maple syrup shade, use light brown sugar. From the...

Spanish Olive and Molasses Spread - June 16, 2008

Similar to a tapenade, you can spread this on any fish fillet or chicken, wrap in a foil pouch, and grill. This green-and-red flecked spread looks particularly pretty over a pink salmon fillet. It can also be used as a snack spread on crispy flat bread or crackers. From the "Caribbean Light" cookbook. -- posted by Jen

Black Bean and Olive Soup - June 15, 2008

Pan Cubano - June 14, 2008

This is a recipe from Cocina Cubana Sonia Martinez Pascual Perez. I have not tried this recipe. I am adding it to 'zaar because there have to uses for sourdough starter besides traditional sourdough and Amish Friendship Bread. I doubt that I will ever use the lard, which is recommended for authentic flavor. My bread machine makes sourdough starter, so I am hoping to play with this recipe on the bread machine. If I can figure out a bread machine version, then I'll add that, too. Note:...

Tilapia Honduras Style - June 5, 2008

I developed this recipe from ideas I found on a webbsite about Honduras. It takes the "bland" out of tilapia, which is nice for a change. -- posted by Donna Matthews

Roasted Sweet Plantains - June 3, 2008

I first had plantains when I moved to the UK and to an area that has a large Caribbean and Nigerian population. They are yummy and sort of like a banana but not exactly as they need to be cooked. This is a really easy way of trying out plantains without being afraid of what to do with them. You don't really need the cooking spray but it wouldn't let me post a recipe with just one ingredient. -- posted by Sarah_Jayne
