Chunky Bermudan Fish Chowder - February 26, 2008

The first recipe I've contributed. This has become a household favorite and good for guests. I found it in Julia Aiken's cookbook Easy Entertaining, where she explains that she's taken some liberties with the original Bermudan recipe, preferring chunkier soups to liquified ones. Original recipe from Denmark but modified during Danish rule over the Virgin Islands by the slaves who worked the Islands. Typically a Holy Week dish which used salted fish rather than fresh fish since fishermen could not go out to sea during this time. -- posted by Celticevergreen

I had this wonderful dish while...

Cuban Bread - February 19, 2008

This recipe is the bread recipe used by my college roommate when making the Sandwich Cubano Recipe 286122. A traditional loaf of Cuban bread is approximately three feet long and somewhat rectangular as compared to the rounder shape of Italian or French bread loaves. In the early days, the dough was stretched thin to make it last, creating the bread's distinctive air pockets and long shape. A shallow trench in the upper crust is created using a moist palm frond but it can also be made using a...
