Jamaican Pork Tenderloin - April 24, 2008

This tenderloin is absolutely fantastic! Everyone I've served it to has loved it. It's a little different than the other Jamaican Pork Tenderloin recipes so I wanted to post it here so I don't have to drag out the big recipe book. You might be thinking..."two tenderloins sounds like a lot, maybe I'll halve the recipe..." Trust me, you want to make the full recipe! I have always served it with Zatarains Caribbean Rice, but next time I'll try one of the rice recipes on Zaar. Time...

Caribbean Chicken Kabobs - April 20, 2008

Great for something different at your next barbecue. Boneless, skinless turkey thighs cut into cubes can be used in place of the chicken. Jerk-Spiced Turkey Picnic Loaf - April 17, 2008

Serve the loaf hot, at room temperature, or chilled: After inverting, lay a few bay leaves on top and sprinkle with peppercorns; surround with marinated mild red peppers. Camarones (Con Crema De Queso) - April 15, 2008

It's a delicious variation of Caribbean cuisine (less tradition blend of common Cuban flavors etc). A nice blend of spices but just enough as not to be overbearing! Instead of shrimp you can use crab if you wish, or a fine combination of the two for seafood lovers! -- posted by CaribbeanLady 2
