Asian Tuna Patties - May 31, 2008

I inventedadapted this recipe from an asian pork cutlet recipe. Tweaked it a bit more to make it conform with the WW Core eating plan. We (including kids) love these, hope you enjoy, too! (The teaspoon of sesame oil adds 1 point to the whole recipe.) -- posted by toriaborg

Black Bean Amanatto (Candied Black Beans) - May 29, 2008

This is a simplified version of amanatto. While it is a simple process, it is time consuming because of the sorting phase. This recipe is a result of some trial and error work with a recipe found at the anime blog and some crystallized ginger recipes that I had at hand. The result should be a soft candied bean with a light sugar coating. Hard beans, lumpy sugar coating, broken beans are all signs of rough handling. I've learned that crunchy beans are a sign of poor quality ingredients. ...

Kayaku Gohan (Rice With Vegetables) - May 29, 2008

From The Best Recipes in the World by Mark Bittman. "This popular one-pot dish can be made with meat or vegetables and, like most casseroles, is easily varied. There are many similar dishes throughout East Asia, but this one is made distinctively Japanese by the addition of mirin and even more so if you use dashi for the cooking stock -- a terrific touch. Arbruage -- fried tofu -- is available, precooked, at Japanese markets; it's slightly sweet. Firm, well pressed tofu can be used as..

Eggplant With Sweet Miso - May 29, 2008

From The Best Recipes in the World by Mark Bittman. Use the Japanese eggplant (the slender, long, lavender-colored varieties rather than the fat, almost black ones) for this recipe. Make this up to an hour in advance; like many eggplant dishes, it's good at room temperature. Or make in advance and run under the broiler to reheat, until the miso topping bubbles (reserve the sesame seeds until after you do this). -- posted by AB_Fan

Japanese Style Beef Rib Eye BBQ - Beef Yakiniku - May 27, 2008

This is the second recipe for the Japanese style barbecue. The first one posted was pork. In Japan, barbecue is popular. It is however different from the American style barbecue. Beef, pork, chicken are usually thinly sliced for quick grilling and are grilled indoors. The diners sit around the table with the grill in the middle and pieces are quickly grilled and eaten at the table a few pieces at a time. This type of barbecue is called yakiniku which translates to grilled meat. People...

Cold Somen Noodle Vegetable Salad - May 27, 2008

A simple, quick, and very healthy salad to make for a light dinner. From a Hakubaku Somen noodle package. I use a mandolin to cut the vegetables. The salad is better if it can sit for about 10 minutes before eating. You could also blanch the carrots for them to be softer in the salad. -- posted by saltandpepper

Summer Breeze - Kunpu - May 27, 2008

In Japanese kunpu is the breeze that wafts in during the early summer months, carrying with it the aroma of just opened leaves. The main ingredient is matcha, a powdered green tea used in the tea ceremony. It has beautiful color as well as certain bitterness and depth. You can purchase matcha from Japanese markets or online. I like using brand specially used for cookingbakingdrinks as shown on the photo. If you prefer your drinks stiff, you can skip club soda. I enjoy both ways. If you...

Simple Miso Soup - May 25, 2008

This Japanese soup is simple, delicious, and low-calorie! It tastes just like the homemade miso soup at my favorite Japanese restaurant. This recipe can easily be doubled, halved, or made to any other size. -- posted by ChefChanteuse
